Kelp Noodle Salad, with Miso-Tahini Dressing (vegan)

  • 1 package (single serve) kelp noodles

For miso-tahini dressing:

  • 1 tbsp miso
  • 2 tbsp tahini
  • 1 1/2 tsp umeboshi vinegar
  • 1 1/2 tsp agave nectar
  • 1 1/2 tsp toasted sesame oil
  • Water, to desired consistency

For topping:

  • 1/2 carrot, julienned
  • 1/2 cucumber, julienned
  • 1 packet inari, cut into thin strips
  • 1 green onion, thinly sliced
  • 1 chili, thinly sliced (or to desired heat)

Rinse kelp noodles and allow to drain. In a separate bowl, mix together ingredients for dressing.  Add to noodles and mix well (I folded the dressing in with my fingers). Place in serving bowl and top with remaining ingredients.

Prep time is about 10 minutes. Serves one (generously) or two.
